The whole plot is four tenths of a hectare of Geisha trees that are eight years old, and this picking came off it on the 12th of February 2025. The code is the recipe. Gigante is the plot, 4 is the fourth time it has been picked this season, N is natural and C is the climate controlled drying room. The cherries went in whole, with all of their sugar still on the bean, and stayed on raised beds in that room for 50 days with constant airflow and precise control of temperature and humidity. Fifty days is a very long dry, and it is only possible indoors where nothing swings.\u003c\/p\u003e\u003cp\u003eIt is the fruit forward one of the pair. Tangerine and kumquat up front, bright and a little sharp, then starfruit and soft yellow tropical fruit underneath. Honey and ripe peach fill in the middle and hold it together.
