{"product_id":"la-gaviota","title":"LA GAVIOTA","description":"\u003cp\u003eLa Gaviota is a family coffee project in the municipality of La Argentina in Huila, at 1900 metres. Leider Ivan Benavides and Andrea Marcela Ferreira started it in 2017 when they bought a small plot and planted several thousand Castillo and Pink Bourbon trees. The goal from the beginning was microlots with traditional washed processing, and over time they pulled the Castillo out and replaced it with more powerful genetics. The farm now carries 2,000 Pink Bourbon, 1,000 Papayo and 2,000 Catimor. In 2025 they acquired a second small farm nearby called El Cedro and planted 1,300 Pink Bourbon and 700 Geisha there. They expect the first harvest from it in 2027.\u003c\/p\u003e\u003cp\u003eThis is the Pink Bourbon from the 2026 harvest. The cherries are picked by hand, and after floating and depulping the wet parchment ferments in dry open tanks for 48 hours. It is then washed and moved to the marquesina, where it dries for 26 days down to 11 percent moisture.\u003c\/p\u003e\u003cp\u003eOn our table it is floral first, with hibiscus and plums, then green mango sharpening the middle and black tea drawing out the finish. The acidity is citric, clean and full, high in intensity.
