The ash trees give the farm its name. Estela Pitti and her family have worked this land since 2008 and planted their first Geisha in 2012. Everything here is high and cool, so the cherries ripen late and slowly.\u003c\/p\u003e\u003cp\u003eThis is the Malaguetto lot, picked on the 27th of February 2026 at 1950 masl. By her own account the cherries were cleaned thoroughly with natural spring water, floated with fresh spring water, depulped, and then fermented for 50 hours in open tanks held at 15 degrees celsius, with Estela watching the tanks personally as they worked. The team then washed the coffee by hand and laid it out carefully in thin layers on protected African beds.\u003c\/p\u003e\u003cp\u003eIt dried on those beds for 15 days before moving into a dark room, where it finished slowly down to ideal moisture. The parchment then rested in a controlled environment until it was milled and prepared for export.\u003c\/p\u003e\u003cp\u003eIn the cup we find yuzu and stonefruit, a perfumed lift through the middle, and honey sweetness underneath.
