We are proud to work with Yaneth from El Pergamino on her second Geisha harvest, which is incredible beautiful. This natural Geisha lot offers complex flavors, with peach acidity, ripe pineapple, candy sweetness, and a floral finish.
The producer's drying house is at 1.920m, providing cold conditions that prevent over-fermentation. The Geisha lot, located on a cool, windy slope at 1.800m, receives plenty of sunlight and has dry conditions.
The cherries, picked at high Brix, dry quickly in the cold, enhancing their tropical notes while limiting over-fermentation. The volcanic soil, rich in nutrients, adds to the coffee's unique complexity.
Dried on African beds in a well ventilated greenhouse, with a temperature range of 15-25°C during harvest.
