ETHIOPIA

NATURAL 74148

This lot involved a close collaboration with 10 farmers, meticulously tracking every step from picking to processing. Such detailed oversight is rare in Ethiopia.

At the Duwancho Washing Station, cherries are preselected, then immersed in water to remove floaters, unripe, overripe, and defective cherries. They are then laid in 25kg batches, 5cm thick, on African drying beds. The cherries are turned 5-6 times a day for even sun exposure. Once moisture content reaches 11-12%, after 15-21 days depending on weather, the coffee is relocated to a nearby warehouse.

Duwancho, a privately-owned washing station in Ethiopia’s Sidama zone, was built in 2021 by Testi Coffee for its premium quality potential. Located at 2250m, the station produces exceptional washed, natural, and special lots. It employs three permanent staff and around 160 seasonal workers. During harvest, 500 independent farmers from nearby villages deliver cherries daily, with each delivery processed as a distinct lot, ensuring full traceability.

Most contributing families farm organically on small plots, under the shade of native trees, at elevations between 2000 –2200m. The cool climate slows cherry ripening, resulting in denser beans and a sweeter, more complex cup.

This coffee is part of Testi’s Premium Cherry Selection (PCS) initiative, launched in 2018 to ensure high quality growing, harvesting, and processing practices. Testi pays a premium to farmers who deliver only the ripest cherries, resulting in the cleanest and highest quality coffees.
