This Jose Gomez Geisha is an ideal embodiment of creativity and diversity. After selecting the best cherries through floating and hand sorting, the coffee beans are depulped and 36 hours of dry fermentation is carried out in a sealed tank. It is then washed with clean water and slowly dried for 25 days in a parabolic greenhouse. The result is a subtle and intricate cup with tropical fruit acidity, maple syrup sweetness, a layered and silky texture, and a bright clementine finish.
Jose has a deep connection to the land. The farm, which was Loma Linda in a past life, was owned by his uncle until it sold and became known as El Paraiso in 1994. When the opportunity to buy it back arose in 2009, there was no question for Jose. He kept the name and began planting Geisha in 2011, on the journey that would lead to coffees like this lot being created: innovative, full, and with lots of personality.
