Our RIO Natural process, inspired by a method we encountered during a visit to Panama, transforms Bekele Kechara’s coffee into something truly extraordinary. The cherries are sealed in water-tight bags and submerged in cold, flowing water for a week long fermentation. This constant flow regulates temperature and ensures a clean, controlled fermentation that enhances the coffee’s natural character. Following this, the cherries are dried slowly to lock in their vibrant flavors.
The result is a remarkably clean and sweet cup with a syrupy yet balanced body. Flavor notes shift delightfully from bright, juicy berries to the refreshing sweetness of melon. This innovative process, combined with Bekele’s expertise and the unique terroir of Murago at 2.350 meters, delivers a coffee that is as unforgettable as the journey that inspired it.
