Finca Los Cenizos sits in Cerro Punta, the highest corner of the Chiriquí highlands, in a volcanic canyon fed by mountain springs and shaded by ash trees more than a hundred years old. The ash trees give the farm its name. Estela Pitti and her family have worked this land since 2008 and planted their first Geisha in 2012. Everything here is high and cool, so the cherries ripen late and slowly.

This is the Malaguetto lot, picked on the 27th of February 2026 at 1950 masl. By her own account the cherries were cleaned thoroughly with natural spring water, floated with fresh spring water, depulped, and then fermented for 50 hours in open tanks held at 15 degrees celsius, with Estela watching the tanks personally as they worked. The team then washed the coffee by hand and laid it out carefully in thin layers on protected African beds.

It dried on those beds for 15 days before moving into a dark room, where it finished slowly down to ideal moisture. The parchment then rested in a controlled environment until it was milled and prepared for export.

In the cup we find yuzu and stonefruit, a perfumed lift through the middle, and honey sweetness underneath. It is the classic washed Geisha shape, drawn very cleanly.

Roasting

We roast to order in Prague, on the lighter side, to keep each origin expressive and true to how we tasted it at source. Your coffee is packed fresh the same week it is roasted. Rest the beans a few days after the roast date and enjoy within two to three months.

We love this corner of Cerro Punta. The farm sits in a volcanic canyon fed by mountain springs, under ash trees older than anyone working there, and because everything is high and cool the cherries ripen late and slowly. Estela watches the fermentation herself and the team washes and beds the coffee by hand. That care is what we taste in the cup.

Geisha

Geisha, also spelled Gesha, traces its roots to the forests of southwestern Ethiopia, where the original seed was collected in the middle of the twentieth century before travelling through research collections in Central America. For decades it was little more than a curiosity, until growers working at high altitude discovered how extraordinary it could taste. At its best it is unmistakable, with intense florality, a delicate tea like quality, bright citrus, and tropical fruit. The plants are slender and shy to yield and offer little disease resistance, so Geisha is demanding to grow and slow to crop, which is exactly why truly great examples stay rare and so highly prized.

Washed

The washed process is the cleanest and most precise way to prepare coffee, and the one that lets a single origin and variety speak most clearly. Every trace of fruit and sticky mucilage is stripped away before the bean is dried, usually by fermenting it loose in tanks and rinsing it off with water, or by scrubbing it away mechanically. Because no fruit is left touching the bean as it dries, nothing masks the raw character of the coffee itself. That is why the washed method is trusted for the finest lots, showing off clarity, bright lively acidity, and the clear stamp of where the coffee was grown.
