Ayla

Bombe is a washed mixed heirloom lot from Bombe village in the Bensa district of Sidama. It is clean and lively, with citrus zest, honey, apricot, and blueberry. This is one of the coffees we roast and pour in our own Mazelab shops. I always buy more than we can get through, so I share the extra as green. Write to me for what is in stock and a sample.

Cherry is floated on arrival, de-pulped, and fermented under water for 96 hours, with the water refreshed every 24 hours and held at 20.5 to 21 degrees. The parchment then dries slowly on raised beds under shade netting for around 15 days. The coffee is certified organic and grows between 2000 and 2250 masl on the forested slopes of Bombe Mountain. Ayla Bombe was the first washing station Testi built in Sidama, four kilometres from the town of Daye, and it carries a personal name, Ayla is the niece of founder Faysel Abdosh.

Testi Coffee was founded in 2009 by Faysel Abdosh Yonis and has grown into one of Ethiopia's largest specialty producers, with 28 washing stations across Guji, West Arsi, Sidama, and Yirgacheffe. His Red Cherry Revolution pays farmers a premium for fully ripe cherry only, and the stations hold a strong Cup of Excellence record, including a Top 10 place for the Gara Agena station in its very first year. The company also funds schools and clean water projects through its Testi Project Direct foundation.
