Guji Hambella Honey is a honey processed heirloom from Hambella Womena in the Guji zone of Oromia. It is round and sweet, with apricot, yellow peach, honey, and white floral notes. This is one of the coffees we roast and pour in our own Mazelab shops. I always buy more than we can get through, so I share the extra as green. Write to me for what is in stock and a sample.
Cherry is sorted to a strict ratio of 95 percent peak ripe and 5 percent overripe, then floated to drop the low density fruit. A controlled eight hour cold soak softens the skins before de-pulping, and the beans keep their full mucilage through a slow honey fermentation. Drying runs about 35 days on raised beds at 25 kilograms per bed under parabolic shade, settling near 11 percent moisture, at 2100 to 2350 masl beside the Dimtu Arbichu river.
Testi Coffee was founded in 2009 by Faysel Abdosh Yonis and has grown into one of Ethiopia's largest specialty producers, with 28 washing stations across Guji, West Arsi, Sidama, and Yirgacheffe. His Red Cherry Revolution pays farmers a premium for fully ripe cherry only, and the stations hold a strong Cup of Excellence record, including a Top 10 place for the Gara Agena station in its very first year. The company also funds schools and clean water projects through its Testi Project Direct foundation.
