Why rinsing changes everything

Many brewers think rinsing the paper filter is only about removing paper taste. But it is really about getting the right flavour in the cup.

We have probably all tried brewing without rinsing, especially when the package says no paper taste. But watch what actually happens with dry paper.

Look at the bloom

During the bloom you always see that brown colour climbing up the sides of the paper. The rinsed paper stays much cleaner and whiter.

That brown stain is not just colour. It is coffee liquid full of dissolved compounds and oils pulled deep into the dry paper fibres. This happens during the most important phase of brewing, when the coffee first releases its most aromatic and flavourful compounds.

It is the soul of the cup.

Dry paper acts like a sponge. It soaks up those precious early drops instead of letting them pass through. Once those compounds are in the paper, they are not coming back.

Rinse properly and the paper is already saturated, so what the coffee gives up in those first seconds ends up where it belongs.
